In a heavy saucepan, heat butter over medium heat. Add garlic and sauté for 2–3 minutes. Stir in the juice, cream, stock, and mustard. Bring to a boil, then lower heat to medium-low and reduce for 10–15 minutes, stirring constantly. Sauce should reduce to about 1 1?2 cups.
Season salmon steaks with salt and pepper and drizzle lemon juice on both sides.
In a large, heavy skillet, heat the oil and butter over high heat. Cook the salmon on one side about 4–5 minutes. Turn and cook about 2–3 minutes more. Plate and spoon sauce over each steak. Serve with Brazilian Collard Greens.
