Preheat oven to 175 degrees F.
Lightly crush 2 tablespoons peppercorns and rub on steaks. In a large, heavy skillet, heat the butter and oil over mediumhigh heat. Add steaks and cook on each side, about 4–5 minutes for medium-rare. Place in a warm oven while preparing sauce. Pour off excess fat from skillet and return to medium heat. Stir in cognac and fl ambé. Add crème fraîche, remaining peppercorns, and salt and boil about 1–2 minutes. Plate steaks and spoon sauce over each. Serve with French fries or grilled tomatoes.
