Mini Party Cakes
Start with 1 package Betty Crocker SuperMoist cake mix (any flavor). Each package makes about 50 little cakes. Heat oven to 350°. Spread batter in greased and floured jelly roll pan. Bake 25 to 33 minutes or until toothpick inserted in center comes out clean cool completely. Frost the cake, then cut into smaller shapes. First cut cake into thirds, then cut into triangles, squares or diamonds.
A variety of pretty decorations give your little cakes a personal touch. Here are just a few ideas:
Top with mini chocolate chips, candies, pastel mints or jelly beans.
Sprinkle the tops of cakes with colored sugar or sprinkles.
Drizzle zigzag lines with melted chocolate. Use dark chocolate on white frosting white chocolate on chocolate frosting.
Add a garden-fresh touch by topping with edible flowers such as violets, primroses and rose petals (make sure they're pesticide free).
Cupcakes:
Cupcakes are easy to transport, making them perfect for parties and picnics. And because they're individual, they're more fun to hold and eat! You can make a batch from any cake batter you'll get about 24 cupcakes. Here are some quick tips for making party-perfect cupcakes:
Line medium muffin cups with paper baking cups. Look for festive cups in colors and special designs at your supermarket, party store or paper supply store.
Fill each cup about 2/3 full with batter. Bake according to package directions.
If you have only one 12-cup muffin pan, cover and refrigerate the rest of the batter while the first batch is baking.
For mini-cupcakes, se small muffin cups, 1 3/4 x 1 inch. Heat oven to 350°, and bake 15 to 20 minutes. You'll get about 48 small cupcakes.
