Remove and chop the stems from the mushrooms, then scoop out the dark brown gills with a small spoon and discard the gills.
In a medium bowl, combine chopped stems and remaining ingredients. Stir with a fork to combine remaining ingredients, add a little mayo if the stuffing looks a little dry. The stuffing should look similar to cooked dressing.
Stuff each mushroom with 1 to 2 Tbs. stuffing and place into an oiled 14-inch Dutch oven or use two 12-inch Dutch ovens. Cover and bake at 375°F for 20 minutes.
