Dave's 16" Dutch Tamale Pie

Ingredients

2 pounds ground turkey (try lean ground round)
3 tablespoons chili powder
1 teaspoon cumin
2 teaspoons fajita seasoning
1/4 cup garlic minced
2 medium onions chopped
2 (28-ounce) cans diced tomatoes
2 (15-ounce) cans whole kernal corn (try hominy, YUM!)
2 (8-ounce) cans diced chilis
3 cups shredded Coldy Cheddar cheese
1 cup chicken broth
2 (12-ounce) boxes corn bread and muffin mix (12 ounces Aunt Jemima corn bread mix from a 5 pound bag)
1 cup milk
1/4 cup melted butter or vegetable oil
2 large eggs

Directions:

In a 16” Dutch oven, brown turkey with chili powder, cumin, onion, and minced garlic. Add tomatoes, corn and chilies. Stir well. Add broth, stir. Layer cheese over the top of meat mixture. Mix corn bread mix, milk, butter, and egg. Spoon over turkey mix and cheese evenly. Cover and bake at about 375° for 45 to 55 minutes until bread is firm and baked through.
