In bowl mix sugar, butter or margarine and whole egg, beating until fluffy. Add extract and yellow food coloring (about 2 or 3 drops). Beat in 1/4 cup ground almonds (grind almonds in food processor, nut grinder or blender), flour and baking powder. Mix well. Dough will be stiff. Take a spoonful of dough and roll into ball. Place on greased cookie sheet. Continue until all dough is used. With spatula or fork, flatten dough into round.
For glaze, mix well, 1 egg yolk with 1 tablespoon water. Brush dough with egg glaze and press 1/2 almond in middle of each cookie. Bake at 350° for about 20 minutes until just turning brown. Remove from sheet and cool on rack.
