Cut apples in quarters, core, pare, and slice into large saucepan add small amount of water, sugar, and spices, if desired. Cover and cook slowly until apples are tender, 15 to 20 minutes. Mash apples with fork or potato masher or put through food mill or chop to desired degree in food processor. Season and sweeten to taste.
