Those of us who bake at high altitudes are familiar with the many recommendations for adjusting sea level cake recipes to our own environment. The changes are tricky and critical. I have found a number of good cake recipes that work at sea level and at 6,300 feet. When changes have been necessary, I have experimented and found the best combination of ingredients for my location. You may have to do the same if you live at an extremely high altitude. If necessary, consult your local County Cooperative Extension Agent for guidance.
