Always check your baked goods for doneness at the minimum time given in the recipe. Your oven temperature may be slightly high or low, so you will have to use your discretion. Most cakes can be tested with a wooden pick or a metal cake tester. If the tester comes out clean after it is inserted in the center of the cake, then the cake is done. You can also touch the top of the cake lightly with your finger. If it springs back, the cake is done. Particularly moist cakes may be hard to test, but if the sides are pulled away from the pan and the top looks set, it is probably done. Cookies are usually judged by appearance, depending on the amount of browning that is desirable for the type of cookie. Bar cookies can often be tested by the cake method, although brownies are an exception. Look for a set appearance in the center of brownie-type bars and do not over bake.
