The question of how to clean and store fresh mushrooms is often raised. Lovely clean white mushrooms are no problem, but often it is necessary to remove considerable surface dirt. Never soak mushrooms. Briefly rinse and wipe with a damp cloth or paper towel. Any bruising will show up as a dark blemish, so handle raw mushrooms gently if appearance is important. Store unwashed fresh mushrooms in a large uncovered container in the refrigerator. Air circulation is important. If purchased fresh, mushrooms will keep for several days.
