1 15-ounce can fresh asparagus
3 tablespoons margarine
1/4 cup onions minced
3 tablespoons flour
1 15-ounce can chicken broth
1 cup milk
1/4 teaspoon paprika
1/2 teaspoon salt
Pour asparagus and liquid into blender and whirl till pureed. Melt margarine in heavy saucepan. Add onions and saute till soft. Stir in flour. Add pureed asparagus, chicken broth, milk, paprika, and salt. Stir and cook till slightly thickened.
Note: If using fresh asparagus, simmer three-fourths pound fresh cleaned asparagus in 2 cups salted water till tender. Cool slightly and puree in blender. Follow recipe as above.
