Dixie Grits Casserole

Ingredients

1 1/4 cups quick cooking grits
4 cups water boiling
1/2 teaspoon salt
8 ounces sharp cheddar cheese shredded
1/3 cup butter or margarine
1/4 teaspoon garlic salt
dash red bell pepper ground
3 eggs
1/3 cup milk

Directions:

Preheat oven to 325°. Grease a shallow 1 1/2 -quart baking dish. In a large saucepan, slowly stir grits into boiling salted water. Return to a boil, reduce heat and simmer for 10 minutes, stirring constantly.

Remove from heat and stir in cheese, butter or margarine, garlic salt and red pepper until cheese melts.

In a small bowl, beat eggs and milk until well blended. Stir into grits mixture. Pour into baking dish. Bake for 60 to 70 minutes or until golden. Let stand for 10 minutes before serving.

MW To Microwave: In a 1 1/2 -quart glass casserole, place hot water and salt. Microwave at 100% power (700 watts) for 5 to 7 minutes or until boiling. Stir in grits and cover with waxed paper. Microwave at 100% power for 5 minutes or until thickened, stirring twice. Stir in cheese, butter or margarine, garlic salt and red pepper until cheese melts. In a small bowl, beat eggs and milk until well blended. Stir into grits mixture. Microwave at 100% power for 5 minutes or until uniformly puffed, rotating dish twice. Cover tightly and let stand for 10 minutes or until center is set.
