Place prepared peaches in bowl and sprinkle with 1/4 cup sugar toss and let stand while preparing custard. Heat half-and-half, heavy cream, remaining 3/4 cup sugar, and salt in saucepan to boiling, stirring to dissolve sugar. Remove from heat cool. Combine cream mixture with extracts and fruit. Pour into ice cream freezer. Freeze according to manufacturer's instructions.
