Gently toss together chicken, green pepper, apple, onions, and oranges. In a small bowl blend mayonnaise, mustard, and ginger add to chicken mixture and stir until coated. Add sunflower seed and spread on buttered bread.
Note: If making ahead, do not add sunflower seed until just before sandwiches are to be served.
