In large saucepan, sauté ham or Canadian bacon in butter or margarine for 2 minutes. Stir in onions and sauté 3 minutes add potato and stir for 2 minutes. Add beef broth bring to boil, reduce heat, and simmer, covered, for 20 minutes or until potato is tender. Blend cornstarch, half-and-half, and egg yolks with whisk add 1/2 cup hot mixture and whisk until well blended. Stir into soup and simmer, whisking for 3 to 5 minutes or until thickened. Stir in sour cream and allspice just before serving adjust seasoning. Sprinkle each serving with parsley or chives.
