* For a Beef and Tomato Quiche or Ham and Swiss Quiche prepare the following recipe for pastry or substitute a 9-inch unbaked pie shell. Pastry: * Place flour and salt in bowl cut in shortening with pastry blender until it resembles oats. Sprinkle in poppy seed. Add water to moisten, gather in ball, and refrigerate, covered, for 1 hour (or place in freezer 1/2 hour). Heat oven to 425°. Roll out pastry and fit into 2 shallow 9-inch pie pans flute edge. Bake 5 to 10 minutes. Cool. Heat oven to 425°. Sprinkle 1/2 ham and 1/2 cheese over each crust. Sauté mushrooms and onions in butter. Spread 1/2 over each crust. Beat eggs and milk together pour 1/2 mixture over each quiche. Bake 18 to 20 minutes or until hot and bubbly.
