* Cooking Time: 5 to 7 minutes Power: 100% (700 watts) Standing Time: 1 to 2 minutes Place bacon on a microwavable bacon rack or between paper towels. Microwave at 100% power (700 watts) for 1 1/2 to 2 minutes or until browned. Set bacon aside.
Coat a shallow 1-quart microwavable dish with non-stick spray. Add cream cheese. Microwave, uncovered, at 100% power for 20 to 25 seconds or until softened.
In a 2-cup bowl, beat eggs with chives. Stir into cream cheese until well blended. Microwave at 100% power for 3 to 4 minutes or until eggs are set but still moist on top, stirring after 1 1/2 minutes. Sprinkle with salt and pepper. Crumble bacon and sprinkle over the top. Let stand for 1 to 2 minutes or until eggs are no longer moist on top.
Meanwhile, toast bread. Spread with mayonnaise. Cut omelet into quarters and place on toast. Garnish with parsley. Serve immediately.
