Toast rice in skillet over medium heat, shaking often, about 10 minutes. Turn into 1-quart casserole add hot water and salt, stirring to separate. Cover and bake in 350° oven for 1 hour or until rice is tender and water has been absorbed. Fluff rice with fork.
Note: This can be baked in the same oven while cooking the Polynesian Chicken.
