Heat oil over medium heat to 365°F in a 10-inch deep, 12-inch Dutch oven. Carefully drop a handful of fries into the oil and fry until lightly browned. With a draining scoop (spider) remove the fries and place in a medium bowl. Add the granulated garlic to the melted butter and stir to combine. Sprinkle a good amount of fresh garlic over the French fries. Then coat lightly with garlic butter. Toss fries well and sprinkle a little parsley over the fries to garnish/ Serve hot on a plate. Continue the process until the fries and other ingredients are used up.
