Melt butter in a 12-inch DO over low heat. Sauté the onion until golden brown. Add remaining ingredients and cook approximately 30 minutes until vegetables are tender. When the vegetables are done, stir in the cream and heat for another couple of minutes. Garnish with a little paprika and serve with a loaf of Irish soda bread or Irish brown bread.
