Gotcha Gazpacho

Ingredients

3 cups chopped tomatoes
1/2 cup chopped, seeded cucumber
1 tablespoon seeded, finely chopped fresh jalapeƱo
1 green onion, finely chopped
1/4 cup finely snipped cilantro
1 clove garlic, minced
1 (16-ounce) can tomato juice
1 tablespoon olive oil
1 tablespoon lemon or lime juice
1/4 teaspoon Tabasco
1/2 cup chopped cooked shrimp (optional)

Directions:

Combine all but shrimp in a nonmetalic bowl. Cover and chill 1 hour or longer. Stir shrimp into chilled gazpacho; spoon gazpacho into chilled bowls. Top each with a dollop of sour cream, if desired.
