Baked Garlicky Parsnips


Serves: 3

Ingredients

3 cups sliced parsnips (about 4-8 small)
1-2 tablespoon olive oil
6 cloves garlic minced
2 tablespoons finely minced fresh parsley
pinch nutmeg
pinch sea salt

Directions:

1. Place the parsnips in a baking dish and drizzle with the oil. Add the garlic and mix. Cover and bake, stirring once or twice, in a preheated 350°F oven for about 30 minutes, or until the parsnips are tender.

2. Uncover and broil for 2 minutes, or until parsnips are lightly browned.

3. Add the parsley and toss to coat. Sprinkle with the nutmeg and salt, and serve immediately.
