Roasted Garlic Potato Cakes

Serves: 5

Ingredients

cold leftover
whole wheat pastry flour as needed
olive oil as needed

Directions:

1. Shape the leftover mashed potatoes into little patties and dredge the patties in the flour, coating both sides.

2. Heat a small amount of oil in a skillet and cook the patties over medium heat until browned on both sides. Serve immediately.
