1. Rinse the chicken and pat dry. Stuff the cavity with the garlic and as much rosemary or oregano as you can fit.
2. Place the chicken in a roasting pan and tent with a piece of aluminum foil. Bake in a preheated 300°F oven for about 4 hours, or until the juices run clear. Serve with brown basmati rice, sautéed vegetables, and a green salad.
