In a large bowl, mix together peanut butter and honey until smooth. Gradually add oats and flaxseed; mix well. Fold in chocolate chips, peanuts and dried fruit; blend together gently. Roll into one-inch balls and place on lightly greased baking sheets. Cover and refrigerate overnight.
Tip: Make your own colored sugar...easy! Place a cup of sugar in a plastic zipping bag, then add two or three drops of food coloring. Knead the bag until color is mixed throughout, then spread sugar on a baking sheet to dry.
