1. Preheat the oven to 325ºF.
2. With a sharp knife, cut off the top quarter of each garlic head so the cloves are exposed and peel off the loose papery skin. Place the heads cut side up in a small baking dish, drizzle with olive oil, then sprinkle with salt and pepper.
3. Cover the dish with foil. Roast for 1 hour, then remove the foil and roast for another 10 to 15 minutes, or until the cloves are soft and light brown. Remove from oven and let cool.
4. Release the softened cloves by gently squeezing them (right onto the bread). Spread with a butter knife.
