Coconut Ice Cream


Serves: 4
Total Calories: 400

Ingredients

2 cups coconut milk (homemade or canned)
2/3 cup sugar, or more to taste
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 teaspoon lemon zest, grated
1/2 teaspoon cinnamon, groun
1/4 teaspoon nutmeg, freshly grated

Directions:

1. Combine all the ingredients in a medium-size bowl, including 2/3 cup sugar, and whisk until the sugar is dissolved. Correct the seasoning, adding sugar if necessary.

2. Transfer the mixture to an ice cream machine and freeze, following the manufacturer’s instructions.
