Serves: 4
1. Skewer the marshmallows and set aside.
2. If using a charcoal grill, prepare this dessert once the coals have died down after the main course. Carefully remove the grill grate and rake the coals into a hot, glowing pile. Roast the marshmallows over the fire until sizzling, melted, and darkly browned all over, turning to ensure even cooking. This will take 3 to 6 minutes.
If using a gas grill, preheat to high and oil the grate. Place the skewer directly on the hot grate and, watching carefully, grill until the marshmallows are lightly browned, about 1 minute. Lift the skewer and brown the other side, 1 minute more.
3. Place a piece of chocolate on the bottom (the flat side) of a cookie. Ease a hot marshmallow off the skewer onto the chocolate. Place a second cookie (flat side down) on top of the marshmallow to make a sandwich. Wait a few seconds for the hot marshmallow to melt the chocolate, then eat the s’more like a sandwich. Nostalgia never tasted so good!
