Heat a grill for direct grilling coat the grill rack with oil. While the grill is heating, mix the ranch dressing and hot pepper sauce in a small bowl set aside.
Season the catfish with the seasoning, and spray with oil. Grill until cooked through, about 3 minutes per side. Transfer to a plate, and cut each fillet in half lengthwise.
Wrap the tortillas in a clean dish towel and microwave at full power for about 1 minute, until heated through.
Spread each tortilla with 1 teaspoon of the sauce. Top each with a piece of fish, 1/4 cup coleslaw, 1 tablespoon tomato, and 2 more teaspoons sauce. Fold or roll to eat.
