OW Bran Bread

Ingredients

6 cups bran (Oats and/or wheat)
1 1/4 cups bread flour
1/4 cup sugar
pinch salt
1 1/2 tablespoons yeast
1/4 cup very warm water
2 1/2 sticks butter melted
3/4 cup room temperature milk

Directions:

Preheat your oven to 450. Mix together well the bran, flour, sugar, and a pinch of salt. Put flour on a smooth surface and make a well in the center. In center of well, dissolve the yeast in very warm water. Let it sit for a few minutes. Add to it the melted butter and milk. Beat with a fork. Draw some flour from inner rim of well over yeast mixture, beating constantly. Keep adding flour a little at a time until you have soft dough. Add more milk, a little at a time if dough is too dry. Work the dough until all ingredients are well mixed and the dough is compact. Form your loaf and place it on a baking sheet. Let dough rise for 30 minutes, depending on how warm the room is. Bake at 450 for 30 minutes then reduce heat to 350 and bake another 30 minutes.
