Smoked Turkey, Wild Rice, and Mushroom Soup

Ingredients

3 tablespoons butter
3 cleaned and chopped leeks
2 medium, diced carrots
1 1/2 stalks diced celery
3 cans beef broth
4 1/2 cups water
3/4 cup wild rice
3/4 cup barley
1 1/2 teaspoons dried thyme
12 ounces sliced, mixed mushrooms
12 ounces chunked into 1/3' cubes, smoked turkeys
1/3 cup whipping cream
1/2 teaspoon pepper

Directions:

In large saucepot, melt butter over medium heat. Cook leeks, carrots, and celery 5 minutes, until slightly tender. Add broth, water, wild rice, barley, and thyme. Bring to a boil over high heat. Reduce heat to low cover and cook 30 min. Add mushrooms and turkey. Cook uncovered 10-15 minutes more, until rice is tender. Stir in cream and pepper and cook 2 minutes.
