1 Place the chicken slices between two sheets of plastic wrap. Gently pound the slices to about 1/4-inch thickness. Sprinkle the chicken well with salt and pepper.
2 In a large heavy skillet, melt 2 tablespoons of the butter with oil. When the butter is melted, add as many chicken pieces as will fit without touching. Cook the chicken until golden brown, about 4 minutes. Turn the chicken and brown the other side, about 3 minutes more. Transfer the pieces to a plate. Repeat with the remaining chicken, if necessary.
3 Remove the pan from the heat. Add the remaining butter, the lemon juice, and the basil to the skillet and swirl it gently to melt the butter. Return the chicken pieces to the skillet and place it over the heat. Turn the chicken pieces once or twice in the sauce. Serve immediately.
