Ingredients

1 1/2 cups whole wheat pastry flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
3/4 cup sugar
2 egg whites
1/4 cup skim milk
1 teaspoon vanilla extract
1 tablespoon lemon juice
1/4 teaspoon lemon extract
1 cup shredded zucchini unpeeled
1/2 cup nuts

Directions:

1. Preheat oven at 350°. Coat 1 loaf pan with cooking spray.
2. Mix flour, baking soda, baking powder, and spices together in a small bowl.
3. Beat sugar, egg whites, milk, vanilla, lemon juice and extract together in a large bowl. Stir zucchini into wet ingredients. Stir in the dry ingredients just until combined. Stir in nuts.
4. Pour better into pan. Bake 45 to 55 minutes or until a toothpick inserted in center comes out clean.
