1. Preheat oven to 350°. Coat 3 loaf pans or 1 loaf pan and 24 muffin cups with cooking spray.
2. Mix dry ingredients (minus nuts and raisins) together in a large bowl. Make a well in center of mixture.
3. Add egg whites, pumpkin, and applesauce to well in dry mixture. Stir just until moistened.
4. Stir in nuts and raisins.
5. Pour batter evenly into pans. Bake 45 minutes (30–35 minutes for muffins) or until toothpick inserted in center comes out clean.
