Mexican Lasagna

Ingredients

BROWN:
1 1/2 pounds ground beef
Add and heat through:
1 1/2 teaspoons ground cumin
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon ground red pepper
1 teaspoon salt
1 teaspoon pepper
16 ounces chopped tomatoes
LAYER WITH:
24 corn tortillas
MIX TOGETHER:
2 cups drained, small curd cottage cheese
1 cup grated mozzarella cheese
1 egg
TOP WITH:
1/2 cup grated Cheddar cheese
2 cups shredded lettuce
1/2 cup chopped tomato
3 , chopped green onions
1/4 cup sliced black olives

Directions:

Cover bottom and sides of 13 x 9 x 2 inch baking dish with 10-12 corn tortillas. Pour beef mixture over tortillas. Place another layer of tortillas over meat mixture. Pour cheese mixture over 2nd layer of tortillas. Bake at 350° for 30 minutes. Sprinkle diagonal rows over casserole of cheese, lettuce, tomatoes, green onions, and black olive.
