Halibut Fettuccine

Ingredients

1 (16-ounce) package fettuccini pasta
1 pound halibut steak chunks
1/4 cup butter or margarine
1 clove garlic, minced
1/4 cup chopped green onions
1 cup whipping cream
1/2 cup dry vermouth
1 cup grated Parmesan cheese
1/2 cup chopped fresh parsley
1/4 teaspoon pepper

Directions:

Cook fettuccine to desired doneness according to package directions; drain and rinse with hot water. Rinse and drain halibut chunks, making sure they are cut into small uniform pieces.

In a large saucepan, melt butter or margarine; add garlic, onions, and halibut. Sauté over medium heat for 3–4 minutes, stirring constantly. Add whipping cream and vermouth; cook until thoroughly heated, about 1 minute. Immediately stir in cooked fettuccine; toss to coat with sauce. Cook over medium heat for 3–5 minutes, or until mixture thickens slightly, stirring constantly. Remove from heat. Stir in cheese, parsley, and pepper; toss to coat. Serve immediately.
