Margarita Pizza

Ingredients

1/4 cup frozen orange juice concentrate, thawed
1/4 cup tequila
1/4 cup fresh lime juice
2 cloves garlic, crushed
1 teaspoon dried oregano
1/8 teaspoon ground red pepper
salt and black pepper to taste
2 cups cubed chicken breasts
1 tablespoon olive oil
1 unbaked or homemade or commercial pizza crust
1 cup shredded mozzarella cheese
extra virgin olive oil
Orange Salsa

Orange Salsa:
1 orange
6 tablespoons finely chopped red onions
4 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
2 tablespoons olive oil
1/2 teaspoon dried oregano
salt to taste

Directions:

Combine orange juice concentrate, tequila, lime juice, garlic, oregano, red pepper, salt and black pepper in a bowl and mix well. Add chicken and mix to coat. Marinate, covered, in refrigerator for 4 hours to overnight. Drain chicken and discard marinade. Sauté chicken in 1 tablespoon olive oil on medium heat until cooked through. Spread over pizza crust and sprinkle with cheese. Drizzle desired amount of extra virgin olive oil over top. Bake according to pizza crust requirements. Garnish with chopped fresh cilantro and lime wedges. Serve with Orange Salsa.

Orange Salsa:
Peel and seed orange and chop into 1/2-inch pieces. Combine orange, red onion, cilantro, lime juice, olive oil, oregano, and salt in a small bowl and mix well. Refrigerate, covered, 2 hours or longer. Use as additional garnish or topping for pizza.
