Apricot Cream Cheese Salad

Ingredients

1 (6-ounce) package apricot jello
1 (20-ounce) can undrained crushed pineapple
2 small jars strained apricot baby food
3/4 cup sugar
1 (8-ounce) package cream cheese, softened
1 (13-ounce) can evaporated milk, chilled
2/3 cup finely chopped nuts

Directions:

Combine Jell-O and pineapple. Heat until mixture simmers. Add apricots, sugar, and cream cheese. Continue heating, stirring occasionally, until cheese melts. Remove from heat; chill until mixture mounds when dropped from spoon. Whip chilled evaporated milk until stiff peaks form; fold into apricot mixture. Pour into a 9x13-inch pan. Chill until firm. Top with chopped nuts.
