Chinese Style Boiled Rice

Ingredients

3 cups long grain rice

Directions:

Boiled in the Chinese manner, rice is very light and fluffy. Allow 3 cups of long-grained rice for 6 servings. Rinse rice in cold water until water runs clear. Put rice in a deep, heavy saucepan. Add water, measuring proper amount by placing hand slightly on rice and adding enough to cover the back of the hand. Add salt to taste. Fit lid tightly on top of pot. Bring to a boil over a high heat. Cook for 3 minutes after steam shows around the lid. Then cook over a medium heat for 5 minutes. Turn to lowest heat and cook for 12 minutes more. Remove from the heat and let stand at least 10 minutes before serving.

Author’s note: Do not wash rice and reheat. Serve as is.
