Spicy Lassi

Ingredients

2 cups dairy or dairy free plain yogurt
1/2 cup cilantro (fresh coriander) minced
1/8 teaspoon ground cumin
1 teaspoon fresh ginger juice
1 cup ice
2 teaspoons honey or brown rice syrup (optional)
fresh or dried red chili pepper to taste

Directions:

Blend ingredients well until smooth and light green, and serve immediately in a frosted glass. Enjoy!

*NOTE: To make ginger juice, simply grate fresh unpeeled ginger root on a small hand grater. Place the grated pulp in your hand and squeeze. You’ll be amazed how much juice you can get this way, without the peel or the pulp!
