Orange Sweet Potato Muffins

Ingredients

3/4 cup cooked mashed sweet potato (baked or boiled)
2 tablespoons canola oil
2 tablespoons liquid sweetener
1 cup orange juice (freshly squeezed is best)
DRY INGREDIENTS
1 3/4 cups unbleached flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Directions:

Preheat the oven to 350°F.

Combine the mashed sweet potatoes, oil, liquid sweetener, and juice in a mixing bowl, and mix well.

Sift the dry ingredients into the liquid ingredients, and stir until well blended. Spoon into lightly oiled muffin tins, and bake for 15 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
