Sunflower Seed Orange Muffins

Ingredients

3/4 cup roasted sunflower seed
LIQUID INGREDIENTS
1 1/4 cups freshly squeezed orange juice
1/4 cup liquid sweetener
2 tablespoons canola oil
DRY INGREDIENTS
1 cup unbleached white flour
3/4 cup rice flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Directions:

Preheat the oven to 350°F.

Blend the roasted sunflower seeds into a coarse meal. Set aside to add with the dry ingredients.

In a medium mixing bowl, combine the liquid ingredients.

Sift the dry ingredients into the liquid ingredients, and add the sunflower seed meal. Mix well and spoon into lightly oiled muffin tins. Bake for 15 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
