Tropical Muffins

Ingredients

LIQUID INGREDIENTS
1 banana mashed
3/4 cup coconut milk
1/2 cup lime juice
DRY INGREDIENTS
1 cup unbleached flour
3/4 cup whole wheat flour
3/4 cup wheat germ
3/4 cup granulated sweetener
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Directions:

Preheat the oven to 350°F.

Mix the liquid ingredients in a medium mixing bowl.

Mix the dry ingredients to the liquid ingredients, and stir well. Spoon into lightly oiled muffin tins, fill ²?? full, and bake for 18 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
