Serves: 4
• Simmer the apricots in the juice until very tender, about 45 minutes. Periodically add more juice as necessary to keep the apricots covered.
• Place the cooked apricots in a blender with the cup of apple juice, stevia concentrate or stevia extract, arrowroot, and salt. Process until smooth. Add a little extra juice if the apricots are still too thick to blend. Return to the pan and cook over low heat for several minutes until thickened. Serve warm or cold.
