Combine all ingredients except biscuits in a large bowl. Toss until apples are well coated; set aside. Reserve 4 biscuits for another recipe. Flatten remaining biscuits to 1/4-inch thick. Spray a muffin tin with non-stick vegetable spray or line with paper liners. Lay biscuits flat over muffin opening; spoon apple mixture onto each biscuit. Use a spoon to gently push biscuit and mixture into muffin cup. Gather dough and pinch to seal, covering apples as much as possible. Sprinkle with additional brown sugar blend and cinnamon, if desired. Bake at 375 degrees for 10 to 15 minutes. Cool slightly before serving.
Tip: Perk up morning place settings in a wink… fill pint-size jelly jars with gerbera daisies.
