Cheese Sauce, Cooked

Ingredients

2 tablespoons butter
2 tablespoons flour
1/2 cup cold milk
1/2 cup chicken broth
1 egg yolk, beaten
1 cup shredded Cheddar cheese

Directions:

Melt butter in saucepan. Gradually stir in flour. Whisk in milk and broth until smooth. Cook and stir until smooth and slightly thickened. Remove from heat. Add small amount of hot mixture into egg yolk. Stir egg mixture into sauce. Cook and stir until mixture barely starts to boil. Remove from heat. Stir in cheese until melted.
