1. Transfer the pan drippings to a pot and skim off and discard the excess fat with a spoon.
2. Add the water, butter, rosemary, and garlic salt to the pot and place over medium heat. Stir with a whisk while gradually adding the flour. Cook while constantly whisking for 5 minutes, or until the flour thickens to a gravy?like consistency. If it gets too thick, add water 1 tablespoon at a time. If it’s too thin, add flour 1 teaspoon at a time, and wait about 1 minute between each addition.
3. Serve piping hot over turkey, stuffing, and, of course, mashed potatoes!
