Pesto Chicken Sandwiches

4 ciabatta rolls, sliced in half
1 large tomato, stem removed, sliced
1 cup of alfalfa sprouts
4 slices muenster cheese
1 chicken breast cooked and cubed
1 diced roasted red pepper
1/2 cup toasted pine nuts
1/2 cup homemade pesto
1 cup mayonnaise
Directions:
Combine chicken, red pepper, pine nuts, pesto and mayo in a bowl until just evenly distributed. Serve on freshly toasted ciabatta rolls topped with cheese and sprouts.
