The BEST Peach Cobbler Recipe Ever!!



Did you know that April 13 is National Peach Cobbler Day? That's the only thing I needed to hear to have an excuse to make it! And that counts as a serving of fruit, right? Right? (wink wink;) ). Peach cobbler is just one of those basics- I think every good cook needs at least one cobbler recipe up their sleeve, and peach cobbler is definitely a must!

What is cobbler anyway? It's technically a delicious dessert that uses some type of fruit and bread or biscuit; it's often crumbly, but it doesn't have to be! It's comparable to a deep-dish style fruit pie. Basically, it's awesome! And I don't know if there is anything better than fresh cobbler out of the oven served with a scoop of vanilla ice cream on top- heaven! When it was originally created in the 19th century, cobbler was not deemed a 'fashionable' dessert to serve to guests; probably due to the fact that this dessert was invented because early settlers did not have the necessary equipment or ingredients to make suet pudding (a steamed or boiled pudding that often required beef), and so they improvised and created this heavenly dish! Now it is an American staple! Let's all take a second to give a moment of gratitude for creativity out of necessity...

Anyways, in honor of this delicious fruit dessert holiday, I thought I would share with you the BEST recipe for peach cobbler ever. I got this recipe from the mother of a close friend of mine. Seriously, this stuff is so good. I love peach cobbler anyway (something about warm peaches- they just melt in your mouth!), but this particular recipe has a very special place in my heart! Unlike most other cobblers, it doesn't have a crumbly cookie texture. It is very moist and dense- almost like a bread pudding or flan. (Am I the only one whose mouth is watering?!) And as if that wasn't enough, it is SO easy to make!

The dessert calls for 2 cans of peaches, but I like to add a little more. I usually add at least three 15 oz cans of peaches, but you could certainly add more! I also add way more peach juice than the recipe calls for. The recipe calls for 1/2 cup, but I seriously probably at least double that- what can I say, I like my cobbler moist! The original recipe that was given to me did not have a cook time on it, but I have found that about 40 minutes is perfect. You want the edges to start getting lightly browned, but you definitely don't want to overcook it!

This cobbler is seriously so good- I have gotten so many compliments from everyone every time I have made it. But don't just take my word for it! Try it and let me know what you think! I think it would be really yummy with berries or any other fruit, too. And don't forget the ice cream! Here's to a Happy Peach Cobbler Day!

Award Winning Peach Cobbler

This cobbler has a dense, spongy texture and is sure to be a pleaser! I like to add a few more peaches and a lot more peach juice to make it extra moist!

Prep time: 5 minutes
Cook time: 40 minutes
Yield:

Serving size: 1
Calories per serving: 443.333

Ingredients:
2 (15-ounce) cans peaches, drain and save 1/2 cup
2 cups flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon salt
2 eggs
1/2 cup butter or margarine, melted


Directions:
Place peaches in bottom of 9x13 pan. Mix together flour, sugar, baking powder, salt, and eggs until crumbly. Spread over top of peaches. Dribble melted butter and peach juice over top. Bake at 350 degrees until lightly browned.
