Fresh Cream of Mushroom Soup


Serves: 6

Ingredients

1 pound fresh mushrooms, chopped
1/2 stick butter
3 tablespoons all-purpose flour
1/2 teaspoon each: salt and pepper
1 cup heavy cream
1 (14 1/2-ounce) can chicken broth
1 tablespoon dry sherry (optional)

Directions:

In large saucepan, sauté mushrooms in butter about 10 minutes, stirring occasionally, until mushrooms are golden brown. Stir in flour, and salt and pepper; cook and stir till thickened. Gradually add cream and broth till hot. Stir in sherry, if desired.
